If you are searching for a deviled egg recipe that doesn’t use mayo, you might want to give this one a try. If you’re a fan of hummus, then you’ll love these deviled eggs. I know that more and more people are searching for alternatives to mayo and hummus is a healthy alternative. According to this article on the Huffington Post, the nutrients in hummus can help with weight management, chickpeas (the main ingredient in hummus) can lower cholesterol, and chickpeas can help reduce cancer risk. Sounds great to me!
It’s my goal to post many more deviled eggs recipes that use hummus instead of mayo, and, as mentioned in the article, it’s great that hummus comes in so many awesome flavors. Plus, it’s really easy to make your own. I decided to start with lemon cilantro because a good friend of mine loves to eat lemon cilantro hummus with garlic crackers. He turned me on to hummus. I’d never tried it before. I love the light freshness of this flavor combination. I’m looking forward to experimenting with many different varieties of hummus to use in my deviled eggs without mayo.
Another benefit of using hummus rather than mayo is that hummus will not spoil if you leave it out on a warm day. So you can take these deviled eggs to a picnic or barbecue on a hot day and not worry about them spoiling quickly, if they even last that long. 😉
I hope you enjoy and will stay tuned for more deviled eggs featuring healthier alternatives to mayo.
- If serving the traditional way, peel eggs and cut in half lengthwise. If serving in egg cups, leave the shell on and remove tops with an egg topper.
- Remove yolks to medium bowl and mash with fork.
- Add hummus, cilantro, garlic powder, lemon juice and salt. Mix until creamy. I like to use a mixer.
- Garnish as desired. I used bits of ham and some of the chopped cilantro. Enjoy!
